Ingredients:
- 1 ½ cup sugar
- 1/3 cup dry mango powder
- 2 teaspoon dry ginger powder
- 1 teaspoon black pepper powder
- 1/teaspoon salt
- 1 tbsp black salt
- 1 tbl spoon fennel powder (optional)
- 1 teaspoon salt
- 1 1/2 teaspoon Kashmiri chili powder
- ½ teaspoon ajwain
- Melon seeds and resins
- 2 1/2 cup Water

How to make it:
- Bring water to boiling and then add sugar.
- Once sugar is dissolved, add all other ingredients and keep stirring.
- Keep it simmer on medium to low heat for 5 minutes and turn off the stove.
- Serve it with all kinds of pakoras and chaat.
Spicy and Tangy green Chutney
This chutney does not contain any mint leaves and goes well with anything!!!
Ingredients
- 1 Bunch of cilantro chopped (don't discard stems- they have the best taste)
- 6-8 green chilies - chopped
- ½ inch ginger - chopped (optional)
- 2 whole lime juice
- ½ teaspoon salt or as required
- Water if required as lime juice might suffice it.
HOW TO MAKE IT:
- Rinse the coriander well in water and roughly chop them.
- Take the chopped coriander leaves, chopped green chillies & ginger, lime juice and salt in a blender jar or a coffee grinder.
- Grind to a smooth chutney. Add a few teaspoons of water if required. But don't make the chutney too thin or watery.
- Serve the chutney with any chaat/pakora or store it in fridge in airtight container.

Ingredients for Dahi Wali Chutney
- 1 Bunch Cilantro
- 14-15 Mint leaves
- 1/2 inch Ginger
- 1 clove garlic
- 1 green lime juice
- 5-6 green chili
- Salt to taste
- 1 teaspoon Chaat masala
- 1/2 cup yogurt

Blend to a smooth paste
- Put all the ingredients except yogurt in a blender
- Blend it into a smooth paste
- This can be served as a Mint/Ginger chutney too!

For added dahi wali chutney
- Whisk yogurt in a bowl and add salt as required.
- Add 4 tbsp chutney in 1 cup of yogurt.
- There is an option to add sugar here. ( I don't like sweet chutney so I don't put sugar here)
Garlic Chutney
Spicy, tangy and garlicy chutney is a best condiment!
Ingredients:
- 5 tbsp Kashmiri red chili powder
- 15 Garlic Cloves roughly copped
- 6-8 peanuts
- 2 tbsp Oil
- 1 whole green lime juice
- Salt to taste
HOW TO MAKE IT:
- Heat up oil in a small pot/pan.
- Add peanuts and garlic and sauté for 2-3 minutes.
- Let the garlic and peanut cool down.
- Add everything together in a blender and make a smooth paste
Cilantro peanut chutney (ahh.. that nutty flavor)
This is again a versatile chutney to go with any options dosa, pakora or as a spread for sandwich
We made vegetable sandwiches last night with this chutney and they turned out so delicious!
Ingredients
- 1 bunch of cilantro
- 25-30 peanuts
- Salt to taste
- 1 lime juice (fresh)
- 5-6 green chili
- 1 inch ginger piece
- 4 inch of fresh coconut piece
- Roasted cumin
- Chaat masala
- sugar(not for me, Tushar likes this chutney sweet and sour)
HOW TO MAKE IT:
- HEAT UP OIL IN A SMALL POT/PAN.
- ADD PEANUTS AND SAUTÉ FOR 2-3 MINUTES.
- LET THE PEANUT COOL DOWN.
- ADD EVERYTHING TOGETHER IN A BLENDER AND MAKE A SMOOTH PASTE
